Our Story

Growing up in Iraq, kebabs were more than food. They were part of everyday life, family gatherings, celebrations, and memories. Their taste, texture, and aroma became the standard by which all kebabs would forever be judged.

When we came to the United States in 2008, we were surprised to discover that authentic Iraqi kebabs were nearly impossible to find. Even establishments that claimed to serve Iraqi kebabs rarely captured the true experience. The reason was simple: the meat was different, the breeds of lamb were different, and one of the most essential components of authentic Iraqi kebabs—the traditional lamb tail fat used throughout Iraq—was simply unavailable.

For years, we searched for the taste we remembered.

Then, in 2015, we discovered a small business in Michigan that specialized in Iraqi kebabs and shipped them nationwide. Excited by the possibility of finally experiencing authentic Iraqi kebabs again, we placed an order. The minimum order was 600 kebabs, so they were shared with friends and colleagues who, like us, had been longing for a true taste of home.

As word spread, more people began asking for authentic Iraqi kebabs. But one challenge remained: consistency. Some shipments were exceptional, while others fell short of the quality and authenticity we believed Iraqi kebabs deserved.

That was the moment our mission was born.

What began in a garage in Fairfax, Virginia, became years of dedication, experimentation, and relentless pursuit of perfection. We quickly discovered that authentic Iraqi kebabs cannot be rushed, simplified, or imitated.

It took years to perfect every detail—the flavor, the texture, the aroma, and the delicate balance that transforms a few simple ingredients into something extraordinary.

According to many of our customers, Mosaic Flavors serves some of the finest authentic Iraqi kebabs available outside of Iraq. While we are deeply honored by that praise, we continue to pursue perfection every single day.
